CARVED MEAT AND CHEESE OMELETTE

Use up leftover roasted meat or deli slices in a quick, tasty and nutritious omelette.  Be creative with your other fillings and use leftover vegetables from your fridge. 

INGREDIENTS

8 large eggs

 ½ cup milk 

2 Ttsp oil

½- ¾ cup roasted meat (turkey, ham, roast beef) 

3 tbsp diced onion (or veggie scraps) 

4 tbsp cheese (cheddar, swiss, blended, etc…)  

Salt and Pepper to taste

METHOD

 

  1. Chop the meat and onions into small pieces. 
  2. Whisk the eggs with the milk until well combined. Season with salt and pepper.  
  3. Drizzle the oil into a non-stick pan over medium-high heat. 
  4. Sweat the onions for 1-2 minutes. Add the turkey or other meat to heat through. Pour the egg into the pan. Stir and move the egg around in the pan so it cooks evenly and incorporates the turkey and onion. 
  5. Flip the omelette over to cook evenly on both sides. Add the cheddar and allow to melt slightly. Add a further sprinkling of salt and pepper to taste.
